Bitches Be Hungry: Spicy Chicken Lettuce Wraps.

HEAAAAALLLLLLTHYYYYYY EAAAATTTTINNNNG!

Wowie guys, I feel different after eating kind better for like 3 weeks.

Like, I had a hot dog the other day and felt *so sick*.

So that’s a good sign that my body is hating super processed food, right?

One of those “Eat This, Not That” meals that are actually kind of good are lettuce wraps.

 

 

I loved these that I made last week so much, I just had to share it with you guys.

Let’s get cooking!

 

1 pound of ground chicken
1/3 cup of soy sauce
1 tablespoon of lemon juice
1 tablespoon of minced ginger
1 tablespoon of chopped garlic
1 tablespoon of hoisin sauce
2 tablespoons of Sriracha
1/4 cup of chopped cilantro
1/4 cup of chopped green onion
1/2 cup white onions chopped, set half aside
1/4 cup of chopped green pepper
Romaine lettuce hearts, ripped in half

 

 

For the Rice:

Cook the rice to package instructions.

Once it’s done, let it cool.

 

For the Ground Chicken:

Combine all the ingredients except the green pepper and Romaine in bowl. Mix well, so the ingredients are evenly combined.

In a medium size pan with olive oil, sauté the green peppers and half of the white onion until the onions are translucent.

Then add in the chicken, cooking it for about 6 minutes or until the meat is no longer pink.

 

Assemble the lettuce cup:

Take half of the romaine heart, and top with the white rice (about less than 1/4), then the ground chicken (about 3 tablespoons worth).

And there you have it!

 

You can also use pork or turkey, if that’s your thing babe.
