Bitches Be Hungry: Chicken Marsala.

I think comfort food should take you back to a happy place, and it doesn’t always have to be something heavy like a baked potato or pot pie.

I’ve been thinking about one of my favorite dinners my mom made growing up for me. My mom worked 2nd shift when I was a kid, so I loved any time I got to sit at the table with her to eat one of her wonderful meals.

And while my mom makes delicious  fried chicken, and *thee best* Fettuccine Alfredo, my favorite thing she had in her recipe repertoire is Chicken Marsala.IMG_3395

So please join me with my trip down memory lane with this recipe!

 

 

For the Chicken Breast:

4 boneless chicken breast, pounded flat
1/2 cup of flour
1 tablespoon of black pepper
1 tablespoon is my paprika
1 tablespoon granulated garlic
1/2 tablespoon kosher salt
2 tablespoons of unsalted butter
2 tablespoons of olive oil

 

For the Marsala Sauce:

1 cup of Marsala Wine
1 Cup of vegetable stock
3/4 cup half-and-half
One pint of baby portabellas, chopped
1 tablespoon of chopped garlic

2 tablespoons of unsalted butter

For the Chicken Breast:

And a bowl combine flour, pepper, salt, and garlic.

Dredge chicken breast, shaking off excess.

In a medium pan, add 2 tablespoons of unsalted butter and 2 tablespoons of olive oil, then cook the chicken for four minutes on each side.

For Marsala sauce:

Once the chicken is done remove from the pan and add the chopped Portabella mushrooms, cooking them for about four minutes.

Add garlic, and cook until fragrant.

After about two minutes, add marsala wine and vegetable stock then turn the heat up, bringing the sauce almost a boil.

We need the sauce to reduce it to about half, so let it cook for about 10 to 12 minutes.

When sauce is reduced, remove from heat and add half-and-half, and put the chicken back in the pan.

I served this with angel hair pasta and topped it with, but I’ve also had it with potatoes or a nice side salad.
