Bitches Be Hungry: Spicy Italian Sausage Meatballs.

Hello, it’s ya girl, the Queen of Meatballs.

Seriously, I make some of the best meat to ever ball.

I  would like to credit my sorta-fake Italian mother, because she makes super delicious meatballs, and I inherited the meatball making skills from her.

I tweaked my mom’s classic recipe a little by adding spicy Italian sausage and a burrata topping.

It feels kinda special and fancy; even when I pulled it out of the oven my boyfriend said, “Wow!” Adding a small details like that turn a normal weeknight meal, to a nice date night bite.

For Spicy  Italian Sausage Meatballs:

1 lb of Spicy Italian sausage

1 lb of ground beef

1 egg

1 cup of Italian bread crumbs

1/4 cup of Parmesan cheese

1/4 cup of mozzarella cheese

2 tablespoons of Italian seasoning

2 tablespoons of granulated garlic

2 tablespoons of olive oil

1 tablespoon of kosher salt

1 tablespoon of black pepper

 

For Tomato Sauce: 

2 cups of three cheese tomato sauce

1/2 cup of ricotta cheese

1/4 cup of white cooking wine

For topping:

1/4 cup of fresh basil, chopped

1/4 cup of parmesan cheese

Fresh burrata cheese

For the sauce:

In a small pot, add tomato sauce, ricotta cheese, and white cooking wine together, bring to a simmer.

I chose to use a store bought sauce because, honey, who has the time on a weeknight?

I like the three cheese flavor, but any tomato sauce you like will work!

The ricotta cheese takes away some of the acidity that tomato sauce can have, while the cooking wine is a trick my mom taught be to add more flavor.

 

For the Meatballs:

In a large bowl, mix together the sausage, ground beef, egg, bread crumbs, parmesan cheese, Italian seasoning, garlic, salt & pepper.

Form into medium sized balls, I was able to make about 15 or so.

Add 1 cup of tomato sauce to the bottom of a cast iron skillet, then the meatballs. Bake the meatballs for 20 minutes on 400 degrees.

After 20 minutes, sprinkle parmesan cheese, basil, and buratta cheese then put it back in the oven for 10 more minutes, or util cheese is melted & bubbly.
