Forty Dollars, Four Meals: Chipotle Chicken Tacos

Last week-ish, I posted a tweet that got an overwhelmingly positive response:

Seems like everyone would like to have some delicious, affordable meals!

A slight tweak, because wow food is expensive??

That being said, I present to you: Forty Dollars, Four Meals!

To kick it off, I’m going to make a super easy, super affordable crockpot recipe.
These Chipotle Chicken Tacos is the perfect weeknight meal & cost less than $15 to make.

*Plus, I have a secret ingredient that will change your (chicken taco) life.*

 

Check out how I made these delicious Chipotle Chicken Tacos!

5 boneless chicken thighs ($4.00)
3 tablespoons of chopped garlic ($2.00)
1 cup of chipotle in adobo ($1.29)
1 pack of Sazón ($1.19)
1 tablespoons Cumin ($1.29)
1 tablespoon of paprika ($2.00)
1/2 cups of cilantro, chopped ($0.79)
1/4 cup of green olives ($1.00)
Tortilla ($1)
2 cups of water

Optional:
Sour cream $(1)
Avocado ($2.)
Red onion ($.79)

This recipe is suuuupppper simple.
Add all of the non-optional ingredients to the crockpot & cook on low for 6 hours or until you’re able to shred it with a fork.

If you were wondering what the secret ingredient is, it’s green olives.
And I know a lot of people don’t love our lives but I swear it is a Puerto Rican secret ingredient.

There’s something about the briney-ness of green olives that adds depth to meat.

I like to get a little crunch on the tortillas, so in a pan with 1 tablespoon of olive oil toast the tortillas until slightly start to brown and get hard.

Top of the chicken tacos with avocado, red onion, sour cream, or any of your favorite taco toppings.

Super easy chicken tacos perfect for taco Tuesday. I love this recipe because it’s literally dumping things into a crockpot and then going on about your day.
