Bitches Be Hungry: Creamy Lemony Chicken Pasta.

Ya’ll know how men on Twitter complain about being “Alfredo’d to death”?

Aka their girlfriends make chicken/shrimp/Cajun Alfredo Pasta so much, that they’re sick of it.

I “Lemon Chicken” my boyfriend to death. While I can make SO MANY DIFFERENT things, there’s something abut lemon chicken that I just love.

I could eat it at least twice a week & not get sick of it.

After taking a (way too long) hiatus, it’s back baby!

 

So join me as I make this creamy lemony chicken pasta, and hopefully, you can hear John’s cries for diversity as you’re reading this recipe!

1 1/2 lbs of boneless, skinless chicken breast

8 ounces of Ziti

1 cup of basil, chopped

1 shallot, chopped

1 cup of chicken broth

1/2 cup of chopped white onion

1/2 cup of heavy whipping cream

1/4 cup of lemon juice

1 tablespoon of Italian Seasoning

1 tablespoon of garlic powder

1 tablespoon of  black pepper

2 tablespoons of olive oil

6 tablespoons of butter, divided into 3rds

Sea salt, to taste

 

Cook the ziti to box directions. While that is cooking, cut the chicken into six strips & season it with black pepper, Italian seasoning, and garlic powder.

Cook the chicken in a cast iron skillet with olive oil and 2 tablespoons of butter, about 4 minutes on each side.

Once the chicken is cooked, set aside & make the sauce.

 

Lower the heat and add 2 tablespoons of butter, then add the chicken broth, red pepper flakes, and lemon juice.

Bring to a simmer until the the sauce reduces by half. Remove from heat and let it cool for a few minutes. Once it’s cooled down, add in the remaining 2 tablespoons of butter & heavy cream.

If you add the heavy cream while the sauce is too hot, it will curdle & the sauce will grainy.

I’ve done this SO many times, and it is the opposite of delicious.

I chopped the chicken up, then added that & the chopped basil to the sauce. Let it warm for about 5 minutes, then add the pasta.

Top with additional red pepper flakes if you wish and some Parmesan.
