Bitches Be Hungry: Salt & Vinegar Potatoes.

Lil baby Potatoes are some of my favorite things in the world.

There’s never a time/place/reason/or season where I think it’s inappropriate to pile them on your plate.

And while it’s typically go cheesy, I decided to give them a whole new life by making them taste like potato chips.

These salt & vinegar crispy potatoes were super easy to make & took less than 30 minutes.

And since I got so many comments when I posted them to Instagram, I’m going to show you how to make them.

 

Let’s get started!

Creamer Potatoes (the small ones!)

1 1/2 cups of white vinegar, and an additional 2 tablespoons

3 tablespoons of olive oil

3 sprigs of rosemary

1/2 tablespoon of kosher salt

1/2 tablespoon of cracked black pepper

Start by boiling the potatoes in a large pot of water with the 1 1/2 cups of vinegar for 15 minutes.

Once the potatoes are done boiling, let them cool & slice them in half.

Then in a pan of olive oil, cook the potatoes until they get crispy (about 8 minutes).

Halfway through cooking, add in the rosemary & 2 tablespoons of vinegar, as well as salt & pepper.

And that’s it!

If you’re feeling bold & very un-vegan like my bf, grate some Parmesan cheese on top!
