Crispy! Tofu!

Would it really be a vegan/ vegetarian food blog without a tofu recipe?

This recipe features my favorite flavors (hi soy & lime!) on a vegan vehicle (wow, hi soy, again.)

Check out how I made this delicious (and easy) meal.

1/4 cup of soy sauce
1/4 cup of Sambal Oelek chili paste
3 tablespoons of chopped garlic
1 tablespoons of fish sauce
1 tablespoon of dried cilantro
Juice of one lime
Extra firm tofu

Start by getting as much moisture out of the tofu as possible.

Place is on a paper towel bottom & top and press out the excess water.

For the marinade, mix everything together except the tofu & set aside.

Then cube the tofu into bite-sized pieces & marinate them for an hour, then flip the pieces over & marinate for another hour.IMG_9738

Place the tofu on the sheet pan & bake in a 400 degree oven for 30 minutes, flipping over half way through.

I served this yummy tofu over a bed of jasmine rice & sour bok choy.
