Bitches Be Hungry: Chorizo Poutine with Modelo Gravy.

Inspiration can cover from the most unexpected places.

The other day at work, I started to listen to this true crime podcast that was on my suggested list for so long.

And I as I listed to more episodes of Dark Poutine (yes, that’s the name), I started to really like the show.

Then I started craving poutine!

If you’re not familiar with poutine, it’s a delicious Canadian dish of fries, gravy & cheese curds.

 

It’s what I imagine to be the perfect drunk food.

So because I love you guys, here is the recipe!

For the Gravy:

1 cup of chicken stock

1 cup of Modelo

1 tablespoon of Dijon mustard

1 teaspoon of white pepper

1 teaspoon of salt

2 tablespoons of flour

2 tablespoons of butter, unsalted

1/4 cup of white onion, chopped

For the Fries:

3 cups of waffle fries*

1 cup of cheese curds

1  pound of chorizo

1/4 cup of green onions, chopped

1/4 cup of jalapeños peppers, chopped

 

Start by making the gravy: melt butter in the pan over medium heat.

Once the butter is melted, add in the flour until it is cooked, making a roux.

Add in the onion & cook them until translucent, then stir in the mustard.

Add in the chicken stock & the beer to the pan.

 

Then mix your ass off while the gravy comes to a boil. Then reduce the heat, letting the mixture thicken.

While the gravy cooking, brown the chorizo in a medium-sized pan.

Make sure you drain the chorizo because it is very oily, and the last thing you is greasy fries.

I chose to use frozen waffle fries* instead of making fries from scratch because, bitches be hungry.

 

 

After the fries are done, I spread them out on cookie sheet, & topped it with the cheese curds & chorizo. Pop it in a 400 degree oven for about 10 minutes, or until the cheese melts.

Drizzle on the gravy, green onions, and jalapeños.

Crack open a beer, tune into Dark Poutine, and enjoy your meal!
