Bitches Be Hungry: Lamb Ragu Lasagna

Happy 2019 everyone!

 

I hope this year brings happiness, prosperity, clear skin & yummy food to everyone.

So I thought long & hard about what the first post should be for 2019: I wanted to start the year of with a bang!

Then it hit me, lasagna. and not just any lasagna, lamb lasagna.

A few months back, my friend Jamie suggested that SnaxNTheCity make it & I was initially intimidated but hey, new year, new challenges, amirite?

So this one is for you Jamie!

Let’s get cooking!

For the Lamb Ragu:

1 cup of diced white onions & celery

1 tablespoon of minced garlic

1 tablespoon of tomato paste

1 tablespoon of crushed red pepper

1 pound of ground lamb

1 cup of red wine

1/2 cup of chicken stock

1/4 cup of red wine vinegar

2 tablespoons of dried parsley

2 tablespoons of dried oregano

2 tablespoon of dried thyme

3 tablespoons of olive oil

28 ounces of crushed tomatoes

For Cheese Filling:

1 cup of mozzarella cheese, an additional 1/2 cup for the top

1 cup of parmesan cheese

1 egg

2 cups of ricotta cheese

1/4 cup of parsley, chopped

1/4 cup of baby spinach, chopped

Other: 

1 cup of tomato sauce

Lasagna noodles

 

Lamb Ragu:

 

In a dutch oven with three tablespoons of olive oil, cook the celery & onions on medium heat until they are translucent. Then add the garlic & tomato paste.

Add the lamb meat, parsley, oregano, thyme to the mixture. Once the meat browns add in a cup of red wine (I used Malbec but any dry red wine will work.) & crushed tomatoes.

Turn up the heat & bring to a boil & add chicken stock. Once it is boiling, reduce the heat & let it simmer until the liquid is reduced by half, about an hour.

Cheese Filling:

Combine ricotta, mozzarella, parmesan, chopped baby spinach, chopped parsley, and one egg in a bowl. Mix until blended, then refrigerate until it’s time to assemble.

The Lasagna!

Boil the noodles in a pot of water to al dente, which was about 11 minutes for me.

Once everything is (finally) done, time to assemble the lasagna.

Spread the pasta sauce on the bottom, the add the noodle, ragu, cheese filling & repeat until you get to the top of the baking dish.

Cover the pan with aluminum foil & bake in an oven on 375 for 30 minutes.

Remove the foil and let it cook for an additional 15 minutes,  so the cheese gets all nice & bubbly.

And there you have it, the most delicious, kinda fancy lasagna!
