Bitches Be Hungry: Asiago Risotto with Lemony Shrimp.

Some meals just remind me of a lazy Sunday.

The comfort of being at home, staying in my pajamas, & curling up on my couch to listen to My Favorite Murder (the best podcast ever!) just makes my heart so full!

This was literally my past weekend, so what better way to enjoy an easy day than to make something just as heartwarming.

This asiago risotto with lemony shrimp is the perfect Sunday meal. risotto gets a bad rep for being high maintenance but I think of it more like you get to put a little more love into this dish.

 

 

So join me as I make one of my all time favorite comfort foods.

1 1/2 cups of Arborio rice
3 cups of chicken stock
1/2 cup of white cooking wine
1/4 cups of white onions, chopped
3 tablespoons of butter
1/2 cups of asiago cheese, grated
1/4 cup of fresh parsley
10 large shrimp
1 tablespoon of lemon juice
zest of a lemon

Start by melting 3 tablespoons of butter in a large pan on medium heat.
Once the butter is melted, add 1 tablespoon of minced garlic & 1/4 cup of chopped white onions & let them sweat. Then add 1 1/2 half cups of Arborio rice, letting the rice toast lightly for about a minute.

 

Reduce the heat to medium-low & add in the chicken stock a cup at a time, letting each cup absorb into the rice then adding another cup.

While the rice is cooking, let’s make the shrimp. I used the large sized raw shrimp, which I seasoned with garlic powder, lemon pepper seasoning, black pepper, and dried oregano.

In a grill pan (my fave is the Grilla from IKEA!), heat up a tablespoon of olive oil & cook the shrimp on both sides until it’s cooked through & opaque in color.

Right before it it’s 100% done, grate a fresh lemon over it & add a tablespoon of lemon juice to the pan.

 

Getting back to the risotto!

Once all the chicken stock is absorbed, add the white wine & let that absorb.

Once the liquid is absorbed, add in the parsley.


Take the pan off the heat & fold in the asiago cheese, making sure it’s distributed evenly.

Add the shrimp to the pan or if you’re trying to be *cute like moi*, place the shrimp on top of the risotto.

And there ya have it!
