Bitches Be Cookin’: Faux Pho.

Sometimes, I crave a big bowl of soup, regardless of the time of year.

More times than not, that soup is a brothy bowl of noodles of Asian origin. There’s just something about it that gets me every time!

A few weeks ago, I was craving Pho but my local Pho restaurant (yes, I’m lucky enough to have a local Pho restaurant) but unfortunately they were closed!

I had two options: 1.) ignore my craving & find something else to eat or 2.) whip up a bowl of faux pho myself!

I call this faux-Pho because there’s no slices of beef like pho bowls normally have (I couldn’t find the cut of beef I want & I didn’t want to half ass this), but it is PACKED with flavor.

This recipe is super simple since nothing has to be cooked, just warmed up!

32 ounces of beef broth
4 tablespoons of soy sauce
3 tablespoons of fish sauce
2 tablespoons of chopped garlic
2 teaspoons of sesame oil
Udon noodles
1 jalapeño pepper, sliced
1 carrot julienned
1 lime, quartered
2 chopped green onions
Cilantro, roughly chopped
A handful of whole cloves
A handful of while allspice

Sriracha
Hoisin

In a medium-sized pot, combine beef broth, soy sauce, fish sauce, garlic, sesame oil, cloves, & allspice & bring to a boil.

While you’re waiting for the broth to boil, chop your jalapeño, green onion & cilantro. I julienne’d the carrots using my mandolin, so the carrots can be thin (chunky carrots do NOT work with this soup).

Once the pho is boiling, remove it from the heat. In a bowl, add the udon noodles &  add the carrots, cilantro, jalapeños, lime, & green onions.

Then then spoon in the broth.

Add hoisin sauce (so yummy!) & the sriracha at your discretion cause it can get really spicy with the jalapeños!
