Bitches Be Brunchin’: Peach Bourbon Waffles.

Do you remember those special “Breakfast for Dinner” nights you use to have as a kid?

Where somehow pancakes & eggs were something extraordinary since you’re eating them at 8:00 pm instead of 8:00 am?

Well, I’ve confirmed breakfast for dinner is just as amazing as an adult as it was as a kid.

But this breakfast for dinner is for grown-ups only!

These buttermilk waffles are drizzled with a peach vanilla bourbon reduction & topped with bourbon soaked peaches.

This recipe was inspired by this delicious Gus & Grey Floozie Peach Bourbon Vanilla jam that #Boyfriend bought for me from Avalon Bakery in Midtown Detroit!

Buttermilk Pancake Mix

2 tablespoons of vanilla extract

2 tablespoons of butter

2 tablespoons of brown sugar

3 tablespoons of Bourbon (I used Bulleit Bourbon, but any brand will do!)

15 oz of canned peach slices

For The Bourbon Soaked Peaches:

I hate that artificially sweet flavor some canned fruit has, so before I started cooking, I rinsed the peaches off in cold water.

I then melted the butter, and added the peaches, brown sugar, and bourbon to the pan. I left that simmer om medium-low heat until the sugar was melted, about 5 minutes.

While the peaches were cooking, I prepared my waffles to the box’s instructions (for this particular mix, all you have to add is water), and made about 6-8 waffles.

After the sugar melts, add the vanilla extract to the pan & let that cook for an additional 3 minutes.

Once peaches are caramelized, they are ready for consumption.

Set aside for waffles or add on top of ice cream!

For Vanilla Bourbon Sauce:

Add 8 ounces of Gus & Grey’s Floozie Peach Bourbon Vanilla Jam to a small pot on medium-low heat with 3 tablespoons of water.

Let jam simmer until it is thin, similar to the viscosity of chocolate syrup, about 7 minutes.

Once both the jam & the peaches are done, assemble the crew.

I topped the waffles with the sauce first, then the peaches & a  tiny pinch of powdered sugar (cause yum).
