Broke Bitch Meal: Cacio e Pepe

Hello loves!

So here I am with the fanciest #BrokeBitchMeal you’ll ever eat!

 I mean look at this beauty, the peppery sauce, the cheese on top.

A little backstory behind the cacio e pepe: it’s a Roman pasta dish that is super simple in its ingredients, but super rich in flavor.

For those of you who know Italian, Cacio e Pepe literally translates to “cheese & pepper”.

And it’s amazing.

Let’s get started!

8 ounces of Linguine

3 tablespoons of Butter

2 cups of Parmesan

1 tablespoon of lemon zest

Boil the linguini noodles until they’re al dente, then save 3/4 cups of the pasta water.

In a separate pan, melt 2 tablespoons of butter & toast the pepper for about a minute.

Add 1/2 of the pasta water to the pan & bring it to a simmer on medium heat.cacio 3.JPG

then reduce the heat to low, adding the pasta, using tongs to toss the pasta in the sauce.

Then add the cheese & a little bit of the pasta water if the linguini looks a little dry.

I added about a tablespoon of lemon zest to the pasta, just to break up the spiciness & add some brightness.

Sprinkle a little more cheese on top & voila!
