Bitches Be Hungry: Beef Ragu.

 Have you ever made something so delicious that after you’re done eating, you’re can’t help to say, “I did that hunty!”

Well that happened to me last week when I tried my hand at making a beef ragu!

I L-O-V-E ragu & since I have recently received a crockpot as a gift from one of #Boyfriend’s lovely co-workers, I figured I’d give it a whirl. 

This hearty pasta dish is surprisingly low maintenance, with the beef simmering in red wine for about 8 hours on low heat.

1 & 1/2 pounds of beef chuck 

4 cups of red wine

2 cloves of garlic

28 ounces of plum tomatoes

3 sprigs of sage 

3 sprigs of rosemary

3 bay leaves

1 shallot, chopped

Mirepoix mixture (I got this ready made one at Trader Joe’s!)

1/4 cup of olive oil 

Pappardelle pasta

Parmesan cheese, shaved 

 Salt & pepper, to taste 

One crock-pot!

Okay so this is one of those recipes that only seems complicated, so get ready to fall in love with this one!

I started off by seasoning the beef liberally with salt & pepper on both sides, then in a hot pan of olive oil, sear both sides of the meat. 

Once both sides have a good sear, transfer the meat to the crock-pot. 

Add all the ingredients except the pasta & the Parmesan cheese.

Also, add only half of the red wine at this time & add other half, halfway through. 

I just half a lot, didn’t I? 

HALF. 

Moving on!

Well actually, that’s kinda it. 

Let the meat go low & slow for 6 hours, then add the rest of the wine, then let it stew for another 2 hours. 

Once the beef is done, I removed it from the crock-pot & shredded it for the sauce. 

I then boiled the pappardelle noodles & added them to a pan of olive oil & chopped garlic, then added the beef & a 1 & 1/2 cups of the sauce from the crock-pot. 

Toss to combine. 

Once you sprinkle some parm on top, you are all done! 

You guys, I love this recipe. I feel like this is  filled with love, and meat, and happiness.
