Bitches Be Cooking: Tomato Basil Soup.

Did you miss us as much as we missed you?

Let’s kick off the New Year the right way & let’s cook up something yummy, shall we?

 Admittedly, I wasn’t the biggest fan of tomato soup.

That all changed when I tasted #Boyfriend’s tomato basil soup from the Nordstrom Cafe.

This was me after trying their soup:

So of course I had to try my hand at making my own!

My tomato basil soup is a pretty darn close dupe for Nordstrom’s. It is creamy, flavorful & will have you craving more. This soup is one of those meals you make on a Sunday & eat throughout the week for lunch.

But enough of my bragging, let’s make some soup!

Four cups of chicken broth

Two 28-ounce cans of whole tomatoes

One can of tomato paste

One tablespoon of  extra virgin olive oil

Two tablespoons of  chopped garlic

Two teaspoons of smoke paprika

One handful of dried basil

Two cups of heavy whipping cream

Two bay leaves

I started by sauteing 2 tablespoons of garlic & smoked paprika in a tablespoon of extra virgin olive oil, then I added the tomato paste.

I let the simmer for about 2 minutes, stirring occasionally so the tomato paste didn’t burn. Then I added the chicken stock & the whole tomatoes, crushing them with my potato masher as I go along.

I also added two bay leaves because I’m literally obsessed with them now.

They add such a wonderful flavor to soups & stews that I can’t image cooking without them. Please remember to remove them before eating, or they’ll mess ya insides up.

Add the basil (I used dried because chopping < literally anything) & let the

soup simmer on medium-low heat for 20 minutes, stirring occasionally. 

Turn the heat down to low & the heavy cream, about 2 cups.

Let that simmer for about 5 minutes.

I toasted a baguette with a little parm so I can dunk them in the soup

& boom, there ya have it.

Let this soup love all over ya.
