Bitches Be Baking (Sometimes): Banana Pudding Cheescake

Hay guys! Wonda here! 

Happy Thanksgiving and all that jazz. Hope you’re all having a great day filled with eating, drinking and other recreational activities. (Hehe) 

Anywho! I thought I’d give you guys a sweet treat! I’ve been on a dessert kick as of late and idk how to stop. (Send help pls)

Now this has to be the most requested thing that anybody has ever asked me to make. 

Like srsly, niggas love it. 

So I figured I’d share! 

Let’s get started. All you need is:

  • 3  blocks of 8 oz cream cheese, softened
  • 2 ripe bananas, diced
  • 1 ripe banana, mashed
  • 1 1/2 cups of Nilla Wafers, crushed
  • 3 eggs
  • 2 tsp of vanilla extract
  • 1/4 cup of butter
  • 1/2 of chopped pecans
  • 2 tbsp of brown sugar
  • 1 cup of granulated sugar
  • 1 tbsp of lemon juice

So for the crust, I just used my food processor to chop the Nilla Wafers really finely. Also threw pecans in there and pulsed them a few times to crush the more. 

Add the butter, wafers and pecans to a bowl and mix til the butter is incorporated. 

Oh yea, you also melt the butter lolol. About 50 secs in the microwave and you straight. 

After it’s all incorporated, spread it at the bottom of a greased springform pan. 

Next, you’ll take about 17ish wafer and stack them boys around the edge of the pan. 

I only got 16 1/2 because life is petty sometimes. 

Set that aside. 

Banana time. 

Combine these with the lemon juice in a saucepan. Add the brown sugar. (Sidenote: you can add an extra tablespoon if your bananas aren’t ripe as fuck yet) 

Stir it for about a minute until the sugar has dissolved them remove it from the burner. 

Time to cream the cheese and sugar! Aka my fave part of the process. 

Using a stand mixer, I mixed the chroma cheese until it was smooth. 

Then I slowly added in the sugar and bih. 

Next I added in the eggs, one at a time. For this part you really wanna make sure you don’t overbeat the eggs. Mix til it’s JUST incorporated but where you can still see the yolks. 

Do dis one by one. 

Also scrap the sides often so everything will mix ~smoothly~

Add the vanilla and mix til incorporated. 

Now you’ll fold in the banana sugar mixture. 

For the fun part, filling the cake. 

With an oven preheated on 350, you’ll pop this in there for about 50-60 mins until it’s almost set. 

From here, you’ll turn off the oven and let the cheesecake sit in the oven and cook for an hour with the door slightly open 

Trust me. 

After an hour, take the cake out and let it cool for another 30 mins. 

It’s worth it, girl. 

Then it’s night night for the cake. Cover it with plastic wrap and let her refrigerate overnight. 

Garnish with whipped cream (recipe up soon) Nillas and ‘nanas et voila. Banana pudding cheesecake. 🙂
