Bitches Be Cookin’–Caramelized Onion Risotto.

Have you ever had a long day at work & all you crave is a comfy couch, a good show, and filling meal? Well my loves, I have the ultimate comfy cozy meal for you to enjoy on your next blah day.

This caramelized onion risotto will warm you up & it even feels therapeutic cooking it.

There’s just something about stirring the rice in the pan that just relaxes me. Stick around for the recipe to this delicious, savory dish.

2 1/2 cups of Arborio rice

8 cups of chicken broth

2 tablespoons of olive oil

4 tablespoons of butter

2 tablespoons of minced garlic

One medium sized onion

2 cups of white cooking wine

1 1/2 cups of Parmesan cheese

I started off by sauteing some minced garlic in both olive oil & butter.

Saute until fragrant.

While the garlic is sauteing, heat your chicken broth in a pot just before it boils.

I read somewhere a long time ago that you’re suppose to use hot broth on risotto, blah blah blah.

Once your kitchen smells like garlic, add the rice to the pan & stir it to make sure all of the

rice is coated with oil.

Then, ladle in the chicken stock. Once the chicken stock absorbs in the rice,

ladle in more, about a cup each time.

Continue this until the rice is al dente.

In a separate pan,  saute the sliced onions in garlic & olive oil until light brown.

At the last minute, I added a splash of red wine to the pan.

It’s a quick step to add even more flavor to the meal.

Getting back to the rice, once the it’s al dente add the cooking wine & let that absorb.

This is what the rice should look like once the wine is absorbed.

Once the rice has absorbed the wine, take it off of the heat & add the Parmesan cheese.

I mixed that together & then topped the risotto with the caramelized onion.
