Broke Bitch Meals: Spicy Vegetable Ramen

Ok y’all so let me give y’all a disclaimer: this was the struggliest, most delicious meal I’ve ever thought up. Like epitome of broke bitch meals.

I basically used everything that I had in my cabinet and improvised the FUCK out of everything I could. 

This is a recipe that I just measure and taste as I go tbh. 

What you’ll need is :: 

  • Part of an onion
  • Soy sauce
  • Sesame oil
  • Fish sauce
  • Sriracha (I used two types)
  • Garlic powder
  • Onion powder
  • Black pepper
  • Roasted seaweed
  • 3 packages of ramen without the chicken seasoning


First you’ll put 2 tablespoons of sesame oil and Sriracha into a pot and let it simmer.

After you simmer that down, you’ll add the onions and garlic powder, a couple tablespoons and occasionally stir until soft and fragrant. 

After they’re so enough, add in about a tablespoon of grated ginger and cook that for a couple minutes.

To this I then added two cups of water and let it simmer on down. 

Now this is where things for super struggly

Being that my cabinets are still fairly empty, I totally didn’t have any vegetable broth to cook with. So what I do? My ass improvised. 

I took about 4 cups of water and just started adding a shit ton of dry herbs, pepper, sea salt and brought that to a boil. 

When it tasted flavorful enough pour moi, I added in the Sriracha and onion mixture. 

By this time, I simmered all those flavors together. About 10 or so mins. 

Now for the easy part! Adding in the noodles. Obvi, these cook in only a few minutes. 

Let those get tender enough to your liking.  

I added a few more drops of Sriracha for that extra kick. 

Just top it off with some of that roasted seaweed and leftover chopped onions (if you pls). 

Easy meal for tight nights. Enjoy. ❤
