So the other day I had my lovely friend Andrea over for dinner & I wanted to make a simple, yet flavorful meal for her.
I made a honey garlic salmon, roasted potatoes & a sauteed kale.
Now I thought the star would have been the salmon but we couldn’t stop reaching for the kale.
Even her husband loved it when she brought some leftovers home!

1 pound of kale
1/2 cup of apple cider vinegar
1/2 cup of chicken stock
2 tablespoons of chopped garlic
1 tablespoon of crushed red pepper flakes
Start off by removing the stems from the washed kale (don’t forget to wash your veggies before cooking them!), then soak them in the apple cider vinegar for about 10 minutes.
While you’re soaking your greens, heat up 2 tablespoons of olive oil in a pan & let the garlic and crushed red pepper saute until fragrant.
After that, put the vinegar-soaked-kale in the pan & cook it or about 3 minutes.
Then add the chicken stock & toss the kale around in the pan a bit to make sure all the leaves are coated.
Saute until wilted.
There you have it, your new favorite side!
