Bitches Be Cooking: Spicy Thai Noodles.

So the other day I had some really good friends over the other day & I decided to flex my cooking skills. But my dear friend Cher (hey Cher!) can’t eat cheese (WAAAAH!!) but I remembered that she loves spicy food. And what is some of the BEST spicy food you can have? Why it’s Thai of course. I made this spicy Thai noodles complete with sriracha, green peppers, and peanuts.

One pound of linguine noodles

1/3 cup of soy sauce

2 tablespoons of sriracha

1 tablespoon of ground ginger

1 tablespoon of minced garlic

1/4 cup of brown sugar (white sugar works too!)

3 green onions, chopped

1 large green bell pepper, cut into strips

1/4 cup of peanuts, crushed

Cilantro, chopped (use as much as you want!)

I started off by boiling the noodles. While they are boiling, I chopped up the green peppers into slices & chopped the green onions.

In a medium sized pan, I added a tablespoon of olive oil & minced garlic and let them sauté. Once the garlic is aromatic, the the onions & peppers to the pan then cook them until they’re soft.

This meal is really about multi-tasking so I hope you have like a ton of pans. I literally had like, 2 pans until last week. So when I was cooking, I had to like stop & wash my pans so it was really an ordeal.

Anyway, time for the ~eggs~.

There’s a lot sneaky ass eggs in Thai food & this dish is no exception! I scrambled two eggs & added crushed red pepper flakes to add some kick.

Set those aside & start on the sauce for the noodles.

Add the soy sauce, sriracha, ginger, garlic, & sugar in a bowl & whisk until it combined.

By this time, I’m sure the noodles are done, so that means it’s time to combine everything together!

Using the pan you cooked the peppers & onions in, add the noodles & sauce. Toss it around in the pan until all the noods are coated in the sauce.

I then added the eggs & a TON of cilantro.

Sprinkle some peanuts on top for some extra crunch & voila!
