Bitches Be Cooking: Pan Seared Scallops.

Hello loves!

I don’t ever think I ever told you guys, but #Boyfriend is hardcore allergic to seafood.

So literally any time I’m not with him I indulge myself in some type of shellfish.

I was feeling particularly indulgent when I made these pan seared scallops with a white wine sauce. I love scallops not only because they’re meaty and succulent, but because they’re very easy to make.

Start off my patting the scallops dry with a paper towel.

In a medium sized pan, sauté a tablespoon of garlic in a tablespoon of olive oil.

One the garlic is nice & fragrant, turn the heat up to medium-high to get a nice sear on the scallop, which takes about 4 minutes.

After the one side is brown, flip the scallop over to get a seat on the other side, about 2 minutes.

Once they’re done, I like to hit the pan with some white wine & my secret ingredient, clam juice.

If you ever made linguine & clams, you know clam juice adds this extra depth to the meal that’s unmatched, so it only made sense to add to the sauce.

I then placed the scallops on top of pasta (this time I used pappardelle) & put some of the sauce on top.

See, wasn’t that an easy meal?
