JB here with the best wings you’ll ever have.
The first time I had caramel wings is at Flowers of Vietnam and ever since that, they’ve been on my mind.
They were super easy to make & incredibly delicious!
Let’s get it started:
1/2 cup of sugar
1/2 cup of lime juice
1/2 cup of soy sauce
1/2 cup of water
1 tablespoon of chopped ginger
1 tablespoon of chopped garlic
A handful of chopped Serrano pepper (this is up to you how much you want to add, spiciness is subjective!)
Okay so, the most difficult part of the recipe is making the sauce, but it’s seriously worth it. In fact, I burned my finger to the point of possible 2nd degree burns but tbh I’d do it all over again for these wings.
I’m not including the recipe for the fried chicken because it’s kinda just a standard fried chicken type thing. But i would suggest making the chicken before you start the sauce because it cooks pretty quick.
Okay enough chit chat, let’s start cooking!
Start off by dissolving the sugar with the lime juice in a pot.
Once that’s dissolved, turn the heat up to high & stir once you see the sugar bubbling.
It’s very important to NOT walk away from the stove at this point because the sugar will go from caramel to burnt ass sugar very quickly.
Once it’s an amber color, take the it off the heat & add in the water and soy sauce.
Stir to combine then add the chopped pepper, garlic, and ginger,
then bring the mix to a boil then let it reduce until it’s nice & thick.
I put the wings to a Tupperware bowl & added the sauce so I can get it even coated my shaking the bowl.
I feel like this is one of the most effective ways of getting sauce on wings, just make sure the lid is secure.
Then there you have it!
Saucy, sweet, sticky wings that will surely have you going back for more.
