10 Minute Meals: Pesto Chicken Sandwich

Hay guys! I know it’s been a while, I’ve missed you all! Life has been super crazy lately but bitches still gotta eat!

So for sandwich month, I decided to share with you guys a quick little recipe inspired by this amazing sandwich that I sometimes get at my second home, Whole  Foods. It’s called The Parrano.

Basically it has spinach, chicken, tomato, pesto & Parrano cheese on ciabatta. So amaze omq.

I wanted to go get a sandwich but being a lazy ass creature of nature, instead of taking my ass 4 miles up to Whole Foods, I went 1 mile to Kroger. Cause, you know, lazy.

All you’ll need is:

  • Your choice of bread. I chose Italian.
  • Baby spinach
  • Pesto
  • Provolone
  • Chicken. (I picked up a rotisserie.)
  • Pesto
  • Your choice of condiments. I got some fancy mayo that was delish and some pepper spread.
  • Onion (optional)

Typically, I like my bread a little crunchy, so I just drizzle some olive oil and face that side down so that it can brown a little bit.

And now comes the easiest part! After it is to your preferred crunchiness, you just throw the sammich togeva!

Slap that pesto right on top. I always add extra because why the hell not?

Top that off with your smoked provolone.

At this point, you can pop this baby byke onto the stove to melt the cheese a lil bit. 

Et voila! You have a quick and easy delicious sandwich. I love to pair them with Wavy Lays for the loopy culture~~
