Bitches Be Cooking: Lemony-Herby Pan Seared Salmon with Smashed Potatoes.

Hope everyone enjoyed their Mother’s Day! Mine was amazing cause I got to spend time with this beauty!

Hi mommy.

Anyway, we went to Katoi with Wonda on Saturday night but for I decided that my lovely mother deserved a nice home cooked dinner for Mother’s Day.

Here’s what I made: A lemony-herby pan seared salmon with smashed potatoes.

Especially the smashed potatoes!

Lemony Herby Salmon:

1/4 cup of dill, chopped.

1/4 cup of parsley, chopped.

4 tablespoons of lemon juice

2 tablespoons of garlic, chopped.

1/2 cup of olive oil

2 pieces of salmon.

Okay so the first half of this post is for the salmon, so if you’re just here for the ‘tots, skip ahead.

Let’s start off by making the marinade for the salmon!

Combine the olive oil, garlic, lemon, dill and the parsley in a zip lock bag,

you don’t have to use the bag but I find this way perfect for easy clean up.

After that’s mixed up, put the salmon in the bag & shake it up, ensuring every inch of the salmon is coated with the marinade.

Let that rest in the fridge for about 30 minutes to an hour.

 After the salmon is done marinating, place in a pan with a tablespoon of olive oil,

and let it cook for about 4 minutes on one side,

then do the same to the other side.

After that, you’re done!

Enjoy this lovely salmon with the smashed potatoes or a lovely salad!

Smashed Potatoes:

1/2 pound of redskin potatoes

1/4 cup of olive oil

3 tablespoons of white wine

1 tablespoon of garlic

 1 tablespoon of Parmesan cheese

Start off by boiling the potatoes until they’re tender, which takes about 30-40 minutes.

Once that’s done, place the potatoes on a lightly oiled cookie sheet

& smash those bad boys flat.

Combine the melted butter, olive oil, garlic & white wine together & drizzle it over the

potatoes.

Pop them back in the oven for 15 minutes.

Sprinkle the parm over them & broil the potatoes for an additional 5 minutes.

There you have it!

The most delicious tots you’ll ever have!
