Bitches Be Cooking: Chicken Piccata.

Hey guys!
Today I want to share a recipe that holds a lot of meaning to me.

This dish is the first meal I’ve made!

When I was about 12 years old, my older sister Whitney gave me a book called “Dish” by Diane Muldrow for my birthday.

This book was about two sister who decided to open up a catering business & it was awesome. At the end of the book, it would include a featured recipe

and in the first book, the recipe was chicken piccata.

Ever since then, I’ve been making it, changing the recipe here and there & now I finally feel like I’ve perfected it.

 So now I’m here to share it with you. 🙂

Let’s get started!

Ingredients:

Two chicken breast (or as many as you need!)

Two lemons

1/2 cup of chicken stock

1/3 cup of dry white wine

2 tablespoons of butter

1 tablespoon of olive oil

1 tablespoon of capers

1 teaspoon of chopped garlic

Flour

Kosher Salt & Black pepper

Any kind of pasta, I used this fancy lemon pepper pappardelle from Trader Joe’s

Okay, so I start off my pounding the crap out of my chicken breast to get them nice & flat,

after that I salt & pepper them then dust them in flour. I only use a little flour because the chicken doesn’t need to be breaded, only a light coating so the sauce can stick.

After that I add the olive oil & butter to the pan & once that’s melted/hot, I add the chicken in.

Once the chicken is done,  I take it out the pan & add the lemon.

I also add more butter & chopped butter to the pan as well.

Then I add the white wine & then let that simmer together.

At the same time, I like to boil the noodles so everything can be done at the same time.

I got this ~fancy~ ass pappardelle from Trader Joe’s which has a lovely lemon pepper flavor to it.

Back to the sauce!
One everything is simmered together, I add the capers in then I put the chicken back into the pan.

I let that it for a few minutes then it’s time to plate!

I just love this meal because it reminds me of how much I love food.
