20 Minute Meals: Lemon Cream Chicken.

You guys, I found my new favorite dish!

The best part about it besides how delish it is, is how easy it is to make!

While I’m writing this, I’m currently cooking it, meaning that I’ve had this meal 3 times this week. It’s THAT good.

I just realized I never told you what it is, it’s a lemon cream chicken pasta.

Doesn’t that just *sound* good?

Let’s get started!

2 cups chicken stock

3 tablespoons of lemon juice

1/2 cup of heavy whipping cream

1 tablespoon of extra virgin olive oil

4 boneless chicken breast

1 tablespoon of chopped garlic

1/2 cup of chopped red onion

1 tablespoon of butter

A handful of crush red pepper flakes

Capers, totally optional, I love capers

8 ounces of the pasta of your choice, I used thin spaghetti

Okay, so first start off my boiling your pasta in a pot of salted water.

While that’s cooking, I like to get started on the chicken.

I seasoned it with salt, black pepper, garlic powder, & onion powder.

I cooked it on medium heat in a pan of olive oil, letting it brown on both sides.

In a separate bowl,

combine the chicken stock, lemon juice, garlic, & the red pepper flakes.

Once the chicken is a little brown on both sides, I took them off the heat & set them aside.

Pour the chicken stock mix in the pan you cooked the chicken in, scraping the brown bits off the pan. Let that thicken up, then remove it from the heat & whisk in the butter.

Put it back on the heat & add the cream,

but don’t let it boil.

After that, I combined the pasta, chicken, & sauce then garnished it with capers.

There you have it!

An easy meal that you’ll soon be addicted to like I am!
