Happy New Year lovelies!
I hope everyone had a safe & happy new year! This year, my boyfriend (yes #Bae is my boyfriend now & I’m quite happy about it) and I enjoyed our first holiday together with a delicious meal that I made for the both of us.
I prepared a red wine glazed filet mignon with blue cheesed mashed potatoes & roasted asparagus. The steak was super juicy & the potatoes were delicious! As for the asparagus, I found out I don’t like asparagus. lol So, if you’d like the recipe for the mashed potatoes & how I cooked the steak, stick around!
For the Filet Mignon:
Two 6 ounce Filet Mignon steaks
Cracked black pepper
Red cooking wine
Okay, so this is super easy!
Take the steak out of the fridge about 30 minutes before you plan on cooking it spot can rest
& liberally salt & pepper it.
Make the pan you’re cooking it in super hot, like suuuuuper hot.
The reason for this is because you’re going to sear the outside of the meat to get it nice & crisp
Once you sear the meat, you can lower the heat & cook the steak for about 4 minutes then splash some red
wine in the pan towards the end.
And there you have it!
The perfect filet mignon!
For the Gorgonzola Mashed Potatoes:
Two Large Russet Potatoes
4 ounces of Gorgonzola cheese
2/3 cup of buttermilk
6 tablespoons of butter
Cracked Black Pepper
I loooove mashed potatoes. I loooove blue cheese.
This recipe combines both of my two great loves.
To get started, place two chopped potatoes in a pot of water & let it boil.
Once the water is boiling, reduce the heat to medium & let it simmer for about 25 minutes.
In a separate pot, combine the butter & buttermilk just so it warms, but don’t let it boil. I mistakenly walked away from this (underestimating how quickly this would take) & I had to redo it.
Once the potatoes are done, mash the hell out of them.
Seriously, put ya whole back into it.
While mashing them, progressively mix in the buttermilk/butter mixture.
After that is done, all you have to do is mix in the blue cheese.
I didn’t use a lot only because #Boyfriend doesn’t really like blue cheese but if I was making these for myself, I’d add a TON of blue cheese.
After you add the cheese, you’re done!
