Bitches Be Baking: Mini Cheesecakes

I know in the red velvet cookie post, I said I hated baking.

And I do.

So you might be asking, “So how are you doing another post about a dessert then, JB?”

Well, 1.) Rude. and 2.) It’s a no-bake cheesecake, silly!

These cheesecakes are little treats for #Bae & i that I decided to make for our New Years Eve dinner.

They’re beyond easy to make & take only 10 minutes to prepare.

Let’s get started!

4 8 ounce packages of cream cheese

2 cups of sugar

1/2 cup of sour cream

Pie crust, I used mini-ones but this recipe can be used to make a full sized cheesecake

1 teaspoon of vanilla extract

heavy whipping cream

I used my stand mixer, but you can mix this by hand.

Combine the cream cheese, sugar, vanilla & sour cream in a bowl & let it mix until it’s blended well. While it was blending, I added a little heavy cream to the mix to make it creamier, maybe about a tablespoon or so.

Once that’s blended together,

I just scooped out the cream filling & placed a dollop in the pie crust.

I had to bang it on the table a little to make it even, but once that’s done,

just pop them in the fridge overnight,

& there you have it!

Mini-cheesecakes. ❤

Enjoy it with a glass of champagne, like I plan on doing tonight!
