On today’s episode of Wonda Is A Broke Boy, we’re gonna try to figure out why bitches be broke.
Oh, I know. Bills and unnecessary trips to Sephora! But…no ragrets.
So while rummaging through my pantry, I figured I’d just make a white wine lemon butter sauce and what goes with a white wine lemon butter sauce? Salmon and pasta, bitch.
Luckily for me, I keep salmon in the freezer and I had half a box of fettuccine noodles left.
All you need for the sauce is a small onion, a couple cloves of garlic (I used so much garlic, lol), white wine, milk + flour (cause bitches ran out of heavy cream), salt, pepper, parsley and basil, butter, lemon juice.
I didn’t measure anything out for this recipe cause when you’re broke and hungry, you tend to not give a fuck about measurements. You just wanna eat. Amirite?
First I cooked the salmon. Didn’t do anything too extravagant. I seasoned it with salt, pepper and garlic powder then brushed it with an olive oil, lemon and garlic mixture.
Seared that then popped it in the oven to broil for a couple mins. Set that aside.
Threw some butter in the same pan that the salmon was in and tossed those chopped and minced veggies right on in there.
After letting them cook and soften, I poured a little over a 1/3 of a cup of white wine and let that simmer on low-med heat until it reduced about half.
Mm. Let those juices dance.
After it reduced, I added my milk and about a tablespoon of flour cause thickness.
Mmhmm. I turned the heat up a bit and slowly stirred with a whisk until it started bubbling and getting a thicker, saucier consistency.
While doing that, I added in some salt, pepper, basil, parsley and I squoze the juice of half a lemon…squoze…I said what I said.
It’s getting there.
I let it get to the consistency I wanted and there ya go! I didn’t mention cooking the pasta cause it *should* be self explanatory.
Fold your pasta on in da sauce
and plop your salmon on top and by golly you’ve got yourself a delicious broke bitch meal!
