#BBBrunching: Vanilla Mascarpone Crepes + Double Berry Syrup

Now unlike Jazzmin, I LOVE me some breakfast food. That’s my jam. (Jam, hehe, toast, haha) But anyway, doe. Crepes. Yah. 

What you’ll need is:

  • 1/2 cup of flour
  • 1 egg
  • 1/4 cup of milk
  • 1/4 cup of water
  • A pinch of salt
  • 1 tbsp of butter, melted


Personally, before I start the crepes, I like to make the syrup and filling first. 

So starting with the syrup, you just need whatever berries you desire ( I did strawberries and blueberries), water, butter, brown sugar and a splash of lemon juice.  

Toss al’lat in there on med heat and let it cook and simmer. Once it thickens, you can lower the heat.  

Just like dat. 

Pour le filling, you will need:

  • 8 oz of mascarpone cheese
  • Vanilla, about a tsp
  • 6 tbsp of powdered sugar, divided
  • 4 oz of cream cheese, softened
  • 1 cup of heavy whipping cream

Take a large bowl and whisk together the mascarpone cheese, cream cheese, half the powdered sugar and vanilla until smooth.  

It’s lit. 

In another bowl, take the other half of sugar and whipping cream and well, whip it. REAL GOOD. 

 After whipping to your heart’s content, fold dat bih into the mascarpone mixture and set aside in the fridge. 

FINALLY THE WAIT IS OVA. We are on to the most important part, DA CREPES. 

Flour and eggs. Whisk them together. As you’re mixing those two, slowly add in the milk and water then whisk til smooth.  

Kay. Now take the melted butter and mix that in, also, as well.  

Heat up a skillet or griddle or whatever tickles your fancy on med-hi heat. 

Puhleeeeeease make sure it’s lightly oiled cause you don’t want your flat ass cakes sliding around for this next part, ok sis? 

When you feel it’s hot enough, po’ up some batter in the pan.  

Now since I don’t have a crepe spreader, I basically just take my pan and throw that ass in a circle. Works just as well.  


After a few minutes or when it looks like the color, Drake, flip it. 

Now you’ve got yourself a muhfuckin uhhhhhhhh, crepe. I made about 4.

Hay, lil baes. 

After you’ve made all you want, you can start filling them. I prefer to pipe them {giggity} but you can scoop or whatev. 
However, since I don’t have piping bags, I just used a sandwich bag, works the same. (No it doesn’t. Get a piping bag)  

Add the syrup and there you have it! Bon appetit!
