I’m one of those people who become *slightly* obsessive over things, particularly food. I get these intense cravings for something & I become crazy until I get it. One week was goat cheese, one time it was ravioli, but this week, it’s beer cheese.
Yes, beer cheese.
Is there really any better combination better than hearty beer (in this case, Guinness) & melty, bubbly cheese ( two of ’em, smoked cheddar & a classic sharp cheddar.)?
so let’s get started!
1 tablespoon of butter
3 tablespoons of flour
1/2 cup of milk
12 ounces of dark beer, I used Guinness
1 tablespoon of Dijon mustard
2 cups of sharp cheddar cheese
2 cups of triple cheddar cheese
hot sauce to taste
You start off by making a roux, so combine 1 tablespoon of melted butter with 3 tablespoons of flour.
Slowly whisk in milk so the roux goes from this, to this.
then add the mustard & half the beer, oh hey Wonda,
& let that come to a boil.
Once that is finished, add 2 cups of the cheese, then the other two cups once they melt together.
Finally, add the rest of the beer & let that come together one last time, then there you have it!
My favorite pub snack without having to put pants on!
jk, I had pants on cause cooking in your underwear is gross.
