Happy Birthday SnaxNTheCity!


In celebration of our very first birthday, we’re posing the recipe that birthed the blog!

Without further ado, here’s our very first (h)idea:

I think this might be the recipe that birthed SnaxNTheCity, it also has probably the funniest back story to it.

It’s by far our best (h)idea. If you couldn’t guess what a (h)idea is from our little portmanteau, it’s any great idea while you are high.

Wonda and I had an edible and were like, “Wow you know what would be great? Shrimp pizza.”

I wish there was more to it, but there’s not.

It’s a really yummy dish that takes all of thirty minutes to make,

Check the recipe out:

1 pound of cooked shrimp.

4 ounces of goat cheese

2 cups of mozzarella cheese

1/2 cup of extra virgin olive oil

1/2 of pesto sauce (I know how to make it, I was just really high so I got the jarred stuff)

pre-made pizza dough (because who has the time to make it from scratch?)

1/2 of a red onion, chopped small.

2 tablespoons of crushed red pepper flakes

1 half of a lemon

What I love about this recipe is that it’s mostly putting things together vs. cooking, so it’s great for last minute entertaining (or cooking while incredibly high.).

Start off by pre-heating the oven to 400 degrees.

While that’s warming up, season the shrimp (I used salt, garlic, and lemon pepper.) & put them in a pan with a tablespoon of olive oil over medium-low heat to warm them (since they’re already cooked you don’t have to put them on high, they shrink that way!)

Once those are nice & warmed, spread olive oil on the pre-made pizza dough. Since this pizza has fish on it, we decided to use olive oil instead of the traditional pizza sauce.

After that we sprinkled 2 cups of mozzarella cheese & sliced up four ounces of goat cheese & placed it on the dough, along with the chopped red onions.

Once that was done, I drizzled the pesto sauce on top then placed it in the oven, baking it for about 15 minutes, or until the cheese is melted & crust is crispy.

Then, I squeezed a lemon over it, to add some brightness & tang to it.

And there you have it!

Oh, if you really want to make it next level, add some capers to it, which I plan on doing the next time I make it because capers = yum.

p.s. after we made it & ate the pizza, I fell asleep for like 14 hours.

This is one of the silliest things we ever did , but it was for sure one of the best.
