Cooking For Bae: Vanilla Pancakes with Strawberry Syrup.

If you’re not familiar with the completely fictional holiday of Sweetest Day, it’s like Valentine’s Day but for men & I believe it’s only celebrated in the Mid-west.

So this in celebration of this bullshit holiday, I decided to make something delicious for my beau.

The funniest thing about this particular meal is that it is a direct result of my stubborness (I’m a Taurus, it’s not my fault!).

Bae asked me if I could make pancakes from scratch & then said, “I guess that’s asking too much.”

So I took this as, “Oh of course you can’t make them Jazzmin! Why would you? Your cooking is okay at best!”

I took this as a challenge, and not only made vanilla pancakes from scratch, I made a strawberry syrup to put on top of it!

Oh just for clarity, he wasn’t being a little shit, he was just asking because he didn’t have any pancake mix!

So basically, if I wasn’t being such a little shit, this could have all been avoided but then I couldn’t share these amazing, fluffy pancakes with you!

Let’s get cooking!

This is one of those recipes that you have to be precise with the measurements:
for pancakes:
1 cup of flour
2 teaspoons of baking powder
2 tablespoons of sugar
1 egg
1 teaspoon of salt
2 tablespoons of vegetable oil
1 cup of milk
2 tablespoons of cinnamon
2 tablespoons of vanilla extract
for syrup:
4 cups (or one whole package) of strawberries
1/2 cup of water
1/2 cup of honey
1 lemon

I suggest starting on the syrup before the pancakes because that takes longer.
Combine the strawberries in a small pot & add the water. Place this on low-medium heat until it begins to simmer, stirring occasionally.

mash the strawberries while they’re in the pot, so you can have little strawberry chunks throughout the syrup.

once the syrup reaches a boil, remove from heat & strain the just into a small bowl, continuing to mash the strawberry solids, extracting as much juice as you possibly can.

at this point, you can begin to make the pancakes.

Combine all of the dry ingredients together except the cinnamon, and make a small well in the middle, before adding the wet ingredients together.

then mix them together until they are, well, pancake consistency.

I like to add the cinnamon now, after all the other ingredients are together.

adding the cinnamon last makes it feel like a secret ingredient, that little thing that adds an extra layer of flavor that you can’t quiet place but love.

corny, I know but I’m a corny ass bitch.

Now it’s the easy part: cook the pancakes!

This made about 4-5 medium sized pancakes, give or take one burnt one.

then all you have to do is pour the syrup over the pancakes & there you have it:
