Broke Bitch Meal: Pesto & Sundried Tomato Linguine

Okay, we all have those weeks where you accidentally spend too much money on bodysuits at American Apparel on Saturday & come Monday, you’re poor AF.

This actually seems to happen to me like every week but that’s neither here nor there.

What can you do when you’re days away from payday & you’re too poor to buy food?

You make one of Snax N The City’s Broke Bitch Meals, that’s what.

Made from things I had on hand, I whipped up this Pesto & Sundried Tomato Linguine in less than 10 minutes. It’s super quick & super delicious!

Okay I’m not really a “measure stuff out” type girl, so I made everything to taste.

I boiled some linguine noodles (which, for some reason I had four boxes of) in a pot of salted water with a little bit of olive oil in it.

Once that was nice & al dente, I dumped that into a pan on low-medium heat & added about 4 large spoonfuls of already made pesto (a bitch don’t have a food processor, sue me) along with some leftover pasta water.

Okay, let’s take a minute and talk about the power of leftover pasta water:

biiiiiiitttccccchhh, yassss!

always save it just in case when you’re making a sauce, it thins it out but somehow it’s better than normal water.

Back to the recipe!

At this point, I added a splash of wine to the mix because wine & pasta are always a good idea.

Ideally, I’d have white wine but bitches be broke so the marsala I had on hand had to do.

After that I squeezed in some lemon juice (again, do this to taste. I love lemon so I added a ton) & threw in some sundried tomatoes.

Just let that all melt together then garnish with some parmesan & voila!

There you have pesto & sundried tomato linguine!
