I think one of the best date idea is staying in and cooking a delicious meal. Especially when your beau is a foodie like you are.
The idea for this recipe came to me in the middle of Whole Foods, when I was struggling to figure what I would cook for him. Then it hit me:
Beer and cheddar soup!
The first time I had it, I fell in love; the sharpness of the cheddar cheese combined with the robust taste of beer just made my stomach smile.

12 ounces of beer (I used a bottle of Coors, it gives it a great beer flavor).
1/2 pound of sharp cheddar cheese.
8 ounces of smoked cheese (I used a smoked cheddar but you can totally replace it with gouda!).
2 1/2 cups of chicken stock.
1 jalapeño pepper, chopped small.
2 tablespoons of flour.
6 strips of bacon (honestly there’s no such thing as too much bacon).
1 green onion, chopped small.
2 tablespoons of minced garlic.
Okay so to get started, place a stockpot on medium heat & cook the bacon until nice and crispy, or about 8 minutes.
once the bacon is finished, remove it from the pot and set the bacon aside. then, in the same pot, add the garlic, jalapeño, and the green onion, and cook until they’re soft, about 7 minutes.
once those are all soft & fragrant (and believe me, you’re entire kitchen will smell delicios just from this alone), add the half the beer (so 6 ounces) until it’s reduced by half.
after that, you add the chicken stock and let it simmer.
while that is coming together, place a small pan on medium heat & melt a half a stick of butter (4 ounces). add two tablespoons of flour to this, stirring occasionally until brown.
this mixture is called a roux & it helps thickens the soup. after the roux is done, add to soup & turn the heat up & cook until thickened.
Add the heavy cream, cheeses and the rest of the beer & let it simmer until nice & creamy.
you have beer & cheddar soup!
